Ronco Severo
Schioppettino di Prepotto 2015
Stefano Novello's Schioppettino comes from Prepotto, the grape's home subzone in the Colli Orientali, on ponca sandstone-marl. Late-picked grapes ferment with native yeasts and get a long skin maceration with frequent punch-downs. The wine then spends 30 months on its lees in 20-hl Slavonian oak and is bottled unfined and unfiltered. Deep ruby, with the grape's signature black pepper over raspberry and blackberry and a slight tannic bite.
